hello! thank you for your interest in the lenny and friends newsletter! in this very first edition you will find a recipe for lentil bolognese, a song i really like and also a photo of my dog i just took.

lentil bolognese (serves 4)

2 tablespoons of vegetable oil
3 - 5 cloves of garlic (or really however much you want, i don't know your life), minced
1 onion, also minced
a few tablespoons of tomato paste
1 can condensed tomato soup
2 cans cooked lentils, drained
2 teaspoons powdered vegetable stock
2 - 3 bay leaves
salt/pepper to taste
your choice of pasta, cooked according to the directions on the packet
cheese, to serve

heat the oil in a large, non stick frying pan over a medium high heat
cook the garlic and onion for 2 - 3 minutes or until they start to soften
add the tomato paste and cook for a further 1 - 2 minutes
(IMPORTANT) turn the heat down to low
add the tomato soup, lentils and vegetable stock as well as half a soup can of water. mix well so everything is combined
add the bay leaves [OPTIONAL: you can also add some worcestershire sauce, red wine and/or tomato sauce (it adds flavour, don't @ me)]
cover and cook for 10 - 15 minutes, stirring regularly to prevent sticking to the pan (this one really likes to stick, be careful!)
remove the bay leaves and season to taste just before serving

i first heard the song pouring by alphabet city a year ago and it's still one of my favourite chiptune songs; it's so sad but at the same time so beautiful. the soundcloud account that posted it seems to be inactive and it's such a pity.
